San Pedro Shrimp Tray Recipe

Ingredients

  • 450 g shrimps (peeled, deveined)
  • 1 green chili pepper (seeds removed, sliced lengthwise)
  • 1 red chili pepper (seeds removed, sliced lengthwise)
  • 1/2 onion (sliced)
  • 1 tomato (sliced lengthwise)
  • 6 baby red potatoes (peeled, halved)
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 teaspoon minced garlic

For the seasoning

  • 1 ½ teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • ½ teaspoon old bay seasoning
  • 1 teaspoon dried oregano (crushed)
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme

Instructions

  • Boil water in a pot over medium heat. Add potatoes and boil for 5 minutes. Drain.
  • Mix all the seasoning ingredients and add half of the seasoning to the shrimp. Mix to coat well and leave for 15 minutes.
  • In a skillet, heat oil and butter over medium heat and sautégarlic until fragrant then add shrimp and cook for 3 minutes per side until golden brown then remove shrimp from skillet.
  • Now, add sliced peppers to the skillet and cook for 2minutes. Add onion and cook for 2 minutes then add potatoes and cook until tender. Stir occasionally.
  • Add tomatoes and remaining seasoning to the skillet, stir well and cook for 3 minutes.
  • Finally, add cooked shrimp, stir well to combine all the ingredients and cook for 3 to 4 minutes.
  • Transfer the shrimp and vegetables to a large serving tray. Serve with garlic bread and enjoy.
