  • 1 cup toor dal/arhar dal
  • 4 tablespoons ghee
  • 1 medium onion chopped
  • 3 garlic cloves chopped
  • 1 teaspoon dry mango powder (amchur)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon red chilli powder
  • 3/4 teaspoon turmeric powder
  • Salt to taste


  • Heat 2 tablespoons ghee in a pan and add half of the onion and garlic and sauté until golden.
  • Add dal, turmeric powder, salt, and two cups of water. Bring to a boil on high heat then lower the heat and simmer for 20 minutes.
  • Add dry mango powder and simmer for another 15 minutes.
  • Heat 2 tablespoons of ghee in another pan and add cumin seeds and sauté until the color changes.
  • Add the remaining onion and garlic and sauté until pink. Add red chilli powder and sauté for few minutes.
  • Transfer this seasoning to the dal pan and simmer for 2 minutes.
  • The delicious dal fry is ready. Serve hot with rice, chapatti, or paratha.
