  • 325 grams flour
  • 150 grams caster sugar
  • 1 egg
  • 120 grams seed oil
  • 120 grams whole white yogurt
  • 120 grams milk
  • 1/2 berry of vanilla
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1/2 teaspoon bicarbonate
  • 400 grams blueberries or berries

  • In a bowl, whisk the egg and sugar by hand with a whiskuntil the mixture is light and fluffy. Then, add the oil, milk and yogurt.
  • Separately, mix together the flour, baking powder, baking soda, salt and the vanilla seeds. Combine them with the liquid ingredients. Mix with a whisk until the mixture is blended. Combine the blueberries.
  • Note: if you use the frozen ones, add them still frozen, do not let them defrost otherwise they will color the dough purple!
  • IMPORTANT: do not mix too much. The mixture must be lumpy! Line a muffin pan with the cups and, with the help of an ice cream scoop, fill them to the top.
  • Bake at 180 degrees for 20 minutes. Delicious blueberry muffins are ready!
