To prepare the coffee cream, first prepare the coffee withthe mocha, you will need 70 g. Then pour the sugar inside and stir to make itmelt. Let the coffee cool down and in the meantime pour the fresh liquid creaminto a very cold bowl.
Start assembling it with an electric mixer and as soon as itis semi-whipped (i.e. as soon as it begins to have a creamier consistency) addthe previously sweetened and cooled coffee, pouring it flush over the creamwhile continuing to run the electric whips.
Continue to work the mixture until everything is whipped completely. Then cover with plastic wrap and refrigerate for at least an hour before serving your coffee cream. You can serve it in small glasses and accompany it with coffee beans covered with chocolate!
