Gordon Ramsay Tomato Soup

Ingredients

Tomatoes 1.5 kg

Extra virgin olive oil 30 g

Basil 5 leaves

1 clove garlic

Salt up to taste

To garnish

Fresh liquid cream to taste

Basil to taste

How to make tomato soup

To prepare the tomato soup, start by washing them. Then dry them and remove the stalk and the skin with a small knife. Cut them in half and empty them of the seeds and juice. Once cleaned, chop them all.

In a deep saucepan, heat the extra virgin olive oil together with a peeled clove of garlic, after 1 minute, add the tomatoes and mix. Letting it flavor for a few minutes.

Then add the basil leaves, add salt and give one last stir before covering with a lid, leaving it to cook over low heat for at least 35 minutes.

After the time has elapsed, remove the basil and garlic, then using an immersion blender blend the tomatoes to obtain a smooth puree. Let it cook for another 25-30 minutes to allow it to dry and shrink a little; after that turn off the heat. Let it cool down to room temperature.

The tomato soup is ready, pour the soup in bowls and garnish it with fresh cream and a leaf of basil and serve.
