I know you must be thinking, “Another salad???” I promise you this will be the last salad posting for awhile! We’ve been hit with a heatwave for the last few days and I have to say as much as I love summer. I wish this humidity would go away! Healthy Black Bean Chili Salad definitely hits the spot, especially on the dog days of summer.
It is a simple salad that requires only a few ingredients. The chili vinaigrette is made in a snap and contributes a nice hint of flavor without the salad being too spicy. It is also one of those salads that you can cheat making by using canned black beans and corn.
This helps out a lot especially when you’re focused on trying to complete dinner on time. Black Bean Chili Salad can also be served with a variety of dishes such as sandwiches, grill steak meals, and can even be utilized as a dip with tortilla chips.
Chili Vinaigrette Dressing
- red vinegar
- 2 tablespoons olive oil
- 1 teaspoon cilantro flakes
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground pepper
- 1 small clove garlic, finely chopped
- 1 can (11 ounces) corn, drained
- 1 medium tomato, seeded, chopped (3/4 cup)
- 1/4 cup scallions, sliced
- 1 can (16 oz)black beans, drained, rinsed
In a small bowl add the red vinegar, olive oil, chili powder, cumin, cilantro, onion powder, and garlic
Whisk all of the ingredients until smooth.
In a separate bowl add the black beans, corn, and tomatoes then pour the dressing into the black bean salad mixture.
Toss to combine.
Lastly, add scallions
and toss once more
Serve alongside with Smoked Turkey Bacon, Havarti, and Tomato Panini!
